Popayan, Cauca is located in the Colombian Massif. It is in a plateau located at nearly 1700 MASL
*Meter Above Sea Level* and in its surroundings coffee is produced in the beautiful undulating


The so-called Meseta de Popayan is sheltered by the Andes mountain range which helps generate
homogeneous climatic and altitudinal characteristics. The result is one of the most outstanding
Colombian coffee origins.


This coffee is produced by approximately 80 growers selected by Cofinet *A colombian green bean
trading company* for their consistency and the cup profile of their coffees. Coffees from this
program are paid based on the quality, often reaching premiums of 20% above the market price.


A coffee that shouts comfort in a loud & clear voice, best to be enjoyed during the morning daybreak.


Brew Guide:
Method: Espresso
Dose: 18g
Yield: 30- 35g
Time: 28-35 seconds (adjust grind size accordingly)
Water Temperature: 93 degrees
We normally use a 7oz cup, double shot for all our coffees.
*for best results use non-homogenized/fresh milk


Method: Filter V60 Handbrew method
Dose: 18g
Yield: 30g for 30 seconds, total yield 280g,
Brew Time: 2 minute (adjust grind size accordingly)
Water Temperature: 93 degrees
